Pancake day is coming!! (recipe included!)

Right then people! I cannot wait for pancake day - and the idea of you guys going without pancakes horrifys me, so I am going to post two alternative recipes - No excuses for no pancakes now!!

I love big thick pancakes, bit fluffy, think american style pancakes, and I don't really do measurements but here is a rough guide as to how I make my pancakes at home:

one cup of flour (self raising)
1 egg
pinch of salt
1tsp of sugar
a drop of melted butter into the mix and oil for frying with.
1/2 - 1 cup of milk (give or take a little bit more, you want quite a thick batter, but you can be the judge and add more or less depending on how thick you want your pancakes!)   (double this recipe if you want more pancakes!) (I'm pretty sure this is right, but it's based from memory! May have to come back and edit this! hahaha!)

Feel free to add some cinnamon if you want to spice things up a bit!

Heat your pan with a little oil, and drop your batter in, let it cook - no poking, prodding or flipping yet, if you give the pan a shake, when it is ready it will move of it's own accord, let it get a little golden, and then flip it over.. Beeeaaautiful!
Make a stack, or eat as you go - with chocolate sauce, chocolate spread, maple syrup, sugar and lemon, strawberries and whipped cream - the pancake world is your proverbial oyster! Go nuts! OO - Nuts, now they'd go well too, with chocolate chips.. God lordy I love pancakes. And cake. Pancakes are a form of cake right? ;-) Haha! Let me know how you get on!


Thin / Crepe-like pancakes - this recipe is measured, as needs to be a little more precise.

100g PLAIN flour (not self raising!)
2 eggs
300ml milk
1tbsp of oil or melted butter in the mix - and oil for frying.


These pancakes only need a tiny amount of oil in the pan, and will take under a minute to cook on each side!
