Super-easy, sharing roast!

In the spirit of making sure I post more - after cooking for friends yesterday, and my lovely friend telling me she was going to replicate what I'd made - I thought to myself, I'll add that on here incase anyone else fancies a go! (It's so easy, even if you don't normally cook, you can manage this!!)

I wanted roast potatoes - I do little mini ones, and a lunch/dinner that we could help ourselves too.. I LOVE roast potatoes. 😍

So I grabbed a big pack of chicken breasts (boneless meat was easier with small kiddos in the house, but you could just as easily do this with thighs or drumsticks.. or a meat free substitute I guess!)

Small bag of baby potatoes, chopped; skins on, into half inch chunks/cubes, soaked for 10mins in water to remove some of the starchiness! and then drizzled with olive oil and rosemary, whacked in the oven at Gas mark 6 - You wanna cook these babies for around 40-45mins. (depending on how big your chunks are.. keep an eye, turn once or twice)

Chicken gets lovingly thrown into an oven dish with some olive oil, green pesto (other pestos are available..) and a little bit of garlic, salt and pepper. Add them to the oven when there's around half hour to go.

I also did some carrots, just cut into batons, parboiled for 4-5mins and added them in around the same time as my chicken.

Job done. You could add other veg, or stuffing, or have some soup and rolls to start if feeding lots of people, but that did 3 grown adults, and 3/4 small humans. :) Wasn't bad if I say so myself..
